I am very lucky to have a good friend who is very conscious about serving “diabetic friendly” recipes. She has the recipes out for me to check the carb content so I can accurately bolus. I was eager to try a new recipe she tried called Raspberry Cheesecake Bars. I felt like we may have found a gold mine with this very delicious comfort food recipe with only 7 grams of carb for a dessert (7 grams per bar)! I was very disappointed to find my blood sugar rise even after bolusing correctly. I have tried it a couple times even as my bedtime snack (of course with bolusing) after exercise. But still, I ended up waking with an elevated blood sugar, not terrible but more elevated than a normal blood sugar reading. Have you find any recipes that have steered you wrong like this one did for me?
