Here’s my recipe:
Pom Festive sweetpotato toasts
1 Sweet potato, sliced leaving skin on
Carbmaster vanilla Greek yogurt, 8 T.
Pom Wonderful Arils, 4 T.
1.Brush sliced sweetpotatoes with olive oil
2.air fry sweetpotato slices at 350 degrees for 15 minutes; then remove from air fryer
3.top each slice with a tablespoon of yogurt
4. Sprinkle pomegranate arils on top of yogurt.
Serves 2 people.
Uh oh, I forgot to film or photograph the steps to preparing the Rutabaga! I simply got too excited preparing it for our side dish at dinner tonight.
Easy peasy to prep:
1. peel rutabaga
2. Cut into cubes
3. Place in water to boil
4. When rutabaga is soft, drain from water and mash or leave cubed
5. Mix butter or margarine and it’s ready to serve!
1 cup cubed serving = 12 g carb; 3 grams fiber.

A Diabetes Journey Story:
I was standing in line to pay for my groceries today and an elderly man that was standing behind me said “excuse me, do you have diabetes?” My brain wasn’t into investigative mode and I first thought… he must have seen my photo and Column in Diabetic Living Magazine (remember we were in the grocery checkout line w all the magazines). Nah that’s not it, they stopped publishing that magazine. I was just staring at the man and then said yes I do have diabetes OH I’m showing my device ( my @omnipod insulin pump)! He said yes, he recognized it because his grandson was diagnosed at age 2 with type 1. We shared trials and triumph stories. I told him I’m a dietitian and diabetes educator; I wrote a diabetes book; I have a diabetes website and a YouTube channel to help others. I had been alone in this journey for a very long time. I was told to keep my diabetes a secret, and I did. The man reflected that he understood by saying yes, that’s how it used to be. Before parted, he asked me for the name of my website. DiabetesEveryDay because that is what it is. ❤️ when I got home w the groceries, I told my husband the story and cried. Why did I cry??? It’s because “I made it”, im@continuing to successfully navigate diabetes, a condition that throws you curve balls daily. And, I helped someone today as much as they helped me to be heard.
