Toby Smithson

Toby Smithson, MS, RDN, CDE is a registered dietitian nutritionist (RDN) and certified diabetes care and education specialist (CDCES) who has successfully managed her own diabetes for more than 50 years. Toby really knows what effectively managing diabetes means for your health and to your normal life, and her combination of professional knowledge and personal experience can help you make small decisions that can make big differences in your future health.

Lindsey Singleton develops fabulous recipes for DiabetesEveryDay. Lindsey’s hometown is Phoenix, and she earned her B.S. degree in Nutrition from The University of Arizona in May 2010. In March 2011 she completed a certificate program in Culinary Arts at the prestigious Le Cordon Bleu Culinary Institute in Chicago. Lindsey has a passion for food and nutrition and hopes to inspire others to cook healthy and delicious meals with the help of the Diabetes Everyday recipes.

Marlene Koch

Marlene Koch is a registered dietitian, is a nationally recognized nutritionist, popular TV personality and  New York Times best-selling author who delivers good health with great taste! She has taught chefs across the nation the principles of healthy cooking and eating for the American Culinary Federation, and sold more than one million cookbooks.  Marlene is a regular guest on QVC and her books and recipes have appeared on television programs including The Today Show, Fox & Friends, and The Food Network, as well as in countless magazines and newspapers including Cooking Light, Woman’s World, Men’s Fitness, Diabetes Health, the Washington Post and the Chicago Tribune. Gita Patel

Gita Patel is a registered dietitian, certified diabetes educator, and certified LEAP (Lifestyle Eating and Performance) therapist specializing in diabetes, women’s health, heart disease, vegetarian nutrition, healthy aging, migraines, IBS, IBD, Celiac disease, food allergies, food sensitivities, and food intolerances, and multiple sclerosis. Sharon Palmer

I have so many feel goods from attending and presenting at this conference. 
❤️sharing diabetes knowledge at my presentation on Monday morning.
❤️hearing on how the presentation impacted them from so many of the dietitians who attended. 
❤️learning from the amazing speakers at other sessions.
❤️learning and schmoozing with vendors at the expo.
❤️networking with fellow dietitians throughout the conference.
❤️And reuniting with my dietitian bestie. We were academy of nutrition and dietetics spokespeople together for 9 years. ❤️

I’m off to speak at a conference. Hoping that when I get back, my tomatoes will be ripe and ready to eat. I’m already meal planning. Thinking of combining my home grown tomatoes, cucumber and onions with rice vinegar dill weed and a packet of low calorie sweetener to make a low carb side dish. 😋

Spring clean up time for my spice rack! Every year when Passover approaches, it’s a double reminder for me to clean out my refrigerator, cabinets and spices! Rule of thumb is to replace ground spices annually. 📝🗓
