Quinoa Stuffed Peppers

Join Toby in this video preparing an excellent vegetarian stuffed pepper dish courtesy of fellow Registered Dietitian and Certified Diabetes Educator Jill Weisenberger. These peppers give us carbs and protein from the whole grain quinoa and garbanzo beans, and the classic combination of mushrooms with spinach lends a richer, meaty flavor without saturated fat.
